Sažetak

In modern technology different ways of cheese surface protection from moulds growth, during cheese ripening are used. All coating materials used in Yugoslavia are imported or produced on the basis of imported components. The aim of this work was to produce acetomonoglyceride coating from domestic components. The influence of coating material on chemical composition and yield of examined and control cheeses, during 50 days of ripening in industrial conditions, are investigated.
