Sažetak Application of ultrafiltration in the dairy industry gave possibility whey protein concentrates (WPC) production. In preparation of milk food for infant the utilization of WPC is more suitable than demineralized whey. The most frequently used WPC for this purpose contained 60-80% of proteins and about 3% of ash in total solids. In preparation of liquid milk food for infant, on the model of human milk, the WPC containing less proteins in total solids as that produced using ultrafiltration of sweet or demineralized whey, could also satisfy.
