Measurement of the color milk and dairy products by means of reflectance

Sažetak

The Bausch & Lomb Spectronic 20 colorimeter reflectance attachment was used to determine the spectral reflectance curves of milk and dairy products. The reflectance curves indicate a minimum percentage of reflectance at wavelength 445-475 nm. A single measurement at 475 nm was found to yield a satisfactory numerical characterization of the color of milk and dairy products. Practical applications of color measurement by means of reflectance are discussed and the use of Spectronic 20 Colorimeter with reflectance attachment is suggested.
