Sažetak
The paper discusses a topical issue of the infl uence of stress due to the transport on quality of pig meat. In a review to stress, there were
described factors and procedures contributing that physiological condition, as well as some newer defi nitions of this condition in animals intended for slaughter. The paper also gives a short description of the most represented biochemical stress indicators: lactic acid (lactate), creatine phosphokinase (CPK) and cortisol. Furthermore, there is given a review of papers by the authors who studied the eff ect of transport and stress which appears consequently in pigs to diff erent characteristics of pig meat quality. At the end, there are discussed the possibilities and ways of relieving transport stress with the goal of improving the quality of pig meat. In conclusion there are given some recommendations for approaching the solving of the disorders in pig meat quality by studying the factors infl uencing the appearance of transport stress and the ways of its reducing by resting before the slaughter, controlling microclimatic conditions in the depot of an abattoir and feeding treatment before the transport or prior to slaughter.
