Toxic metal content of micro and macro elements in fat tissue and broiler meat depending on the source of fat in the diets

Sažetak

The aim of this research is to determine the toxic metal content, macro and micro elements present in the fat tissue, dark muscle and white meat, depending on the type of fat used for broiler fed diets. Samples of two broiler groups were analysed. The rst group of Cobb 500 hybrid broilers (60 broilers) were fed a high-concentrate diet supplemented with 3 % soybean oil. The second group of broilers, also Cobb 500 hybrid (60 broilers), were fed a similar high-concen-
trate diet supplemented by 3 % beef tallow. During the rst sixteen days, broilers were fed with a starter mixture, and from the 17th to 42nd day they were fed with broiler nisher mixtures. Connective tissue, kidney fat tissue, and dark and white broiler meat was taken for the analysis. Samples were taken randomly. The average content of toxic metals Cadmium (Cd) and Lead (Pb) in the fat tissue, muscle dark and white broiler meat which were fed a diet containing soybean oil was 0,016 mg/kg and 0,038 mg/kg; 0,013 mg/kg and 0,097 mg/kg; 0,010 mg/kg and 0,095mg/kg. The fat tissue, dark muscle and white broiler meat which were fed a diet containing beef tallow was 0,015 mg/kg and 0,013 mg/kg; 0,010 mg/kg and 0,008 mg/kg, 0,009 and 0,038 mg/kg. The highest amount of Potassium (K), Natrium (Na), Magnesium (Mg), Copper (Cu), Manganum (Mn) and Iron (Fe) was in the fat tissue of broilers fed a diet containing beef tallow; the average value was: 603 mg/kg, 215 mg/kg, 64 mg/kg, 0,031 mg/kg, 0,081 mg/kg, 26,08 mg/kg. The levels of Zinc (Zn) in the analysed samples increased from the highest level in the dark m eat in both treatments, and the broiler group fed by a diet
containing beef tallow had higher levels of 15,54 mg/kg. Levels of toxic metals, macro and micro elements in the fat tissue, and dark muscle and white meat samples of broilers were not identied in the unacceptable amounts in both treatments. Higher levels of toxic metals were in the samples whose diet contained soybean oil compared to the samples whose diet contained beef tallow,
and the content of microelements in fat tissue, dark muscle and white meat, indicate that the broiler group on the diet containing beef tallow was higher, compared to the group on a diet containing soybean oil.
