INDICATORS OF THE BIOLOGICAL VALUE OF ROSS AND ARBOR ACRES CHICKEN MEAT

Sažetak

Analyses of chemical structure /water, protein, tat, ash/ and the content of tryptophen and hydroxyproline were carried out on samples of breast and leg meat from two groups of Ross and Arbor Acres chicken hybrids. The results of analyses: - Considerable differences were found in the structure of breast and leg meat in all the examined properties and in both groups of hybrids. - The average share of protein in breast meat was 23.71% /Ross/ and 22.54% /Arbor Acres/ and in the leg meal 21.57% and 19.51%. The tested differences between the values for breast and leg meat were at the level of P<0,001 , while between the groups of hybrids they were at the level of P<0,01. -The averageshare of fat was higher in leg meat/Ross 3.08%,Arbor Acres 5,42%/ when compared with the breast meat /1.72%, 2.37%/ and the tested differences were at the level of P<0,001, while between the hybrids they were significant only for the leg meat /P<0,01/ - The average share of tryptophen was higher in breast meat /Ross 0.36%, Arbor Acres 0,35% /, while in hydroxyproline it was reverse. /breast 0.075%, 0,074% and leg 0,141%, 0,126% /. The tested differences between the average values for breast and leg meat were in all cases at the level of P<0,001, except for tryptophen in the Arbor Acres chicken / P<0,01/. - On the basis of all the indicators it was possible to conclude that the biological values of breast meat in comparison with leg meat were significant and undisputable, while there were no significant differences between the Ross and Arbor Acres hybrids.
