Sažetak

Partridge is a game classified in the group of field hens. We can find them on the inland parts of Croatia, Istria and Dalmatia. By its special way of feeding partridge is quite beneficial for the corps. In order to preserve partridges in hunting grounds, hunters have defined adequate ways of supplemental feeding during the winter-time. Furthermore, there are guidelines, given by the hunters ethics, for hunting that will not reflect negatively on partridge population. The usual hunting techniques used for partridges are quarter hunting with dog and different wildfowling methods. Since older partridges should be cooked, it is necessary to estimate age of shot game. Large amount of recipes guaranties enjoyment in this esteemed delicacy.
