Importance of selenium in poultry meat

Sažetak

The purpose of the present investigation was the assessment of the level of selenium in the meat of the poultry fed with additional quantities of organically bound selenium. The investigations were conducted on a total of 80 Ross hybrid line chickens. On the 42nd day, 0.366 mg/kg of selenium was found in control animals' red meat and 0.390 mg/kg in white meat. After a 48-hour fasting, selenium level insignificantly decreased in all samples obtained from the controls. In the trial group, an increase of selenium level in poultry meat, even after fasting, was observed. By the completion of fattening, on the 44th day, both in red and white meat of chickens that received additional organic selenium a significantly higher selenium quantity was detected (0.803 mg/kg in red meat and 0.800 mg/kg in white meat). Administration of organic selenium as poultry feed additive results in an increase of the total quantity of selenium in poultry meat. Poultry meat enriched with selenium might become especially valuable as "functional diet" and have an essential effect on selenium intake in the human body.
