Glucose, fructose and sucrose in the cherry fruit

Sažetak

The study was conducted on the cultivars Regina, Karina, Creska and Stella cultivated in continental and Mediterranean regions of Croatia. The cultivars Regina and Karina were cultivated at the scientific and experimental station Jazbina, while Creska and Stella were cultivated on the island of Cres. Sugar quantity (glucose, fructose and sucrose) was determined by using enzyme technique. The purpose of this study was to examine whether there were differences in the quantity of certain sugars, between studied species and at defferent sites, depending on the climate. The obtained results demonstrate that there are significant differences between the studied species. E.g. cultivar Stella had the highest amount of fructose (7.73%), while the highest amount of glucose was found in Regina (7.62%) and Creska (7.00%). The quantity of sucrose was low in all investigated cultivars. The lowest amount was determined in the cultivar Regina 0.003 %, and the highest in the cultivar Creska 0.183 %. In the cultivar Karina, sucrose was not determined in the sample.
Based on obtained results we can conclude that in climatic conditions of the Mediterranean and continental Croatia, investigated cultivars have a satisfactory quantity of sugars.
