Sažetak

Biogenic amines are known to cause intoxication or potentiate histamine food poisoning in people. Histamine is the most toxic biogenic
amine formed in fish; therefore finding reliable and efficient methods to detect and quantify histamine and other biogenic
amines in seafood early in the production chain is needed. Usefulness and efficiency of two test kits for quantitative analysis of histamine
were evaluated in this paper as alternatives to the chromatographic methods if seafood production, when more advanced
laboratory equipment is not available. The range of values obtained by histamine tests was similar in samples without the addition of
standards, while in samples with standards it varied from -25 to 15% compared to the means. Recovery and repeatability of the test
kits ranged from 98 to 114% and 7 - 14 % rsd. Both kits had standard curves with R2-values above 0.998 but were less efficient than
the chromatographic method.
