Sažetak

Black Slavonian pig is a low-productivity and, considering the population (46 boars and 604 sows, HSC (Croatian Livestock Center), 2006.), an endangered pig breed. In order to provide survival of this breed it is necessary to determine its economic value in terms of indoor/outdoor production system and crossbreeding with other breeds. This paper points to the slaughterhouse value of the Black Slavonian pig and its crossbreds with Swedish Landrace in indoor and outdoor production system. Meatiness in the carcass of the Black Slavonian pig and its crossbreds with Swedish Landrace from the outdoor production system was higher (41,00 % and 44,59 %) than meatiness in the carcass of these genotypes from the indoor production system (38,50% i 42,95%). Conformation of pig carcasses from the outdoor production system was better at both genotypes, and contents of intramuscular fat was higher. Crossbreeding between the Black Slavonian pig and the Swedish Landrace had positive effects on meatiness of pig carcasses of crossbreds and on meat quality. There were no significant differences between meat of crossbreds and meat of the Black Slavonian pig in terms of pH value and water binding ability (p>0,05), but crossbreads had statistically significant (p<0,05) higher level of crude proteins in the meat, and less crude fat in the meat both in indoor and outdoor production systems.
