Damages on peach and nectarine fruits caused by low temperatures and possibilities of their reduction

Abstract
Peaches and nectarines are fruits with expressed senescence and they are subject to rapid rotting after picking. To reduce losses, they are transported and kept in low temperatures. In such conditions, there appears a problem of damages of fruits caused by low temperature, which manifests as peach flesh turned brown, floury flesh, redness of flesh, loss of aroma, and softening. These symptoms are not visible externally, and the problem is noticed only when the product reaches the consumers. Such fruits cause onsumers’ rejection of consummation and further purchase of peaches and nectarines. The review deals with specific damages caused by low temperatures and ways of their prevention based on professional literature.
