Sažetak

Recently developed techniques (DNA-hybridisation-RFPL, PCR, HPLC, improved imunological techniques using monoclonal antibodies and 2 dimensional gel electrophoresis etc..) make it possible to detect higher percentage structural loci being polymorphic. Development of electrophoretic techniques enables quick phenotyping and as its consequence, application of milk protein polyinorphism becomes more realistic. In this paper we have tried to review some aspects of milk protein polymorphism in cattle: - biological function of polymorphic milk proteins in cattle is briefly described, - there is a list of genetic variants estableshed sso far , - prime structure is given for each case in fraction, alfa- actalbumin and beta-lactoglobulin and its relationship(aminoacid differences) with other genetic variants, - possible phylogenetic relations among genetic variants are presented , -gene frequency data scattered through literature are presented in the form of tables . Cattle milk proteins as polymorphic variants can be videly applied in livestock improvement and dairy processing so phenotyping milk protein variants in the cattle of Croatian is a matter of urgency.
