Sažetak
Animal Feed safety is essential for animal health and productivity. Because of risks that microbiological contamination and presence of harmful compounds in products of animal origin present to human health, current approach is to implement control systems in order to provide quality feed at the beginning of food chain. Microbiologically most important contaminations include pathogenic bacteria like Salmonella, moulds and mycotoxins. A Hazard Analysis and Critical Control Point Program should be implemented in the whole food and feed chain, including feed factories. The Program is implemented according to current situation in production by analysis of potential hazards that can have negative effects on that production, by identification of critical control points and establishment of critical limits. Development of Corrective plan in a case of deviations from Control limits ensures potential contamination of feed. The most important microbiological and chemical factors that can have impact on the production of safe feed, as well as an example of implementation of Program of self-control according to a hazard analysis and critical control point principles are described in this paper.
