Evaporation during spray drying of milk

Sažetak
The authors describe dynamics of water evaporation at milk spray drying. The amount of heat absorbed by milk droplets does not depend of their dimensions. Increase of heat coefficient is possible with increase of inlet air temperature. But this possibility is limited due to damaging effect of high temperatures on product quality.
