Tradition of winemaking and quality of red wines from Postira, wine-growing hill Brač

Sažetak

One of the oldest cultivated plant, grapevine, has been present in Dalmatia and on the Island of Brač since the ancient times. The first findings on its cultivation on the Island date back to Roman times, and today it is still grown mainly on smaller areas, for household purposes. Indigenous red varieties predominate in cultivation, in particular, Plavac mali, Babić, Tribidrag and Ninčuša, but Merlot´ and Syrah as well. Beside the overview of conditions and tradition of winemaking, the aim of this study was to determine the composition and quality of red wines of the wine growing hill Brač, precisely from the area of Postira Municipality. For this purpose, eleven wine samples, vintage 2018, were analyzed for the basic physicochemical composition, total polyphenols and anthocyanin’s concentration together with quality of sensory properties. The analyzed wines were produced by the traditional method with a maceration during 10 to 12 days, an open method with a raised pomace (“hat”). The basic physicochemical analysis showed the alcohol, extract and ash concentrations characteristic for Dalmatian wines, and all samples were semidry. Concentrations of total polyphenols were in the range from 1813-3628 mgL-1 and total anthocyanins from 97-318 mgL-1. Sensory analysis confirmed intensive coloration of all samples, while taste and odor quality varied depending on the sample.
