Abstract

Arugula (Eruca sativa Mill.) is an annual or biennial herbaceous plant from the cruciferous family (Brassicaceae). It is grown for its leaves with a spicy-bitter taste and a variety of applications in gastronomy. It also has medicinal properties, and in the past it was used to treat scurvy due to its high vitamin C content. Although it has been growing as a wild plant in Herzegovina since ancient times, it is still slightly represented in vegetable gardens. The climate of Herzegovina is suitable to produce arugula because it can be grown all year round. In recent years, baby leaf cultivation of arugula has become increasingly popular in the West, which is increasingly conquering the domestic market.
