Research of chemical composition of milk from hilly-mountaneous regions of SR Serbia, and possibilities of processing on the spot

Abstract
The authors made research of milk quality from regions of Zlatibor and Timočka krajina. According to analytical results, milk from Timočka krajina had an average 12.68 percent of solids and 3.97 percent of fat. Zlatibor region milk had 13.06 percent solids and 3.88 percent fat average. In the region of Timočka krajina a modified and improved white cheese processing was organized, what indicated as an economical method of milk surpluses utilization.
