Abstract

The greatest quantity of kids' meat is produced in non developed countries of Asia and Africa, where meat is the main goat product. In Europe, carcasses of young kids are considered to be a delicaty and are consumed on special occasions (Christmas, Easter). The majority of kids slaughtered are between 15 and 45 days old (weight 6-15 kg). Kids' carcasses are light and tender, with low contant of fat, and are less compact when compared to carcasses of other animals. While the weight of carcass is mostly under the genetic influence, dressing percantage and meat quality depend mostly on the diet composition and way of feeding, age in the moment of slaughtering, sex, processing and preparation. Acceptability of kid and goat meat depends on its colour, tenderness, flavour, way of preparation and current marketing price.
