Abstract
Wine is very complex fluid, known and often described as one of the oldest natural products. With the alcohol, which is dominant compound, wine contains hundreds of substances, with different chemical composition and properties. Each group of components is responsible for wine quality, more or less, but phenolic composition became most interesting field of research, because of it’s positive effects on public health. Grape is very important source of these compounds, in some cases the most important, but the wine making technology and the storage conditions also play big role in quality parameters; chemical composition and sensory properties. During wine aging, some substances disappear, some new arise, many of which are poorly described in the literature.
