Abstract
Sugar strands are one in a row dessert decorations. Their production takes place in confectionery industries by using extrusion and sugar paning processes. The proportions of the ingredients in the recipe, composition and process of production sugar strands signifi cantly depend on great
number of factors, like a selected production technology, quality standards and appearance of the final product.
