Production and financial characteristics of microgreens - illustration from practice

Abstract
Microgreens are plant species that are consumed in the cotyledon stage with or without incompletely developed first true leaves. Due to their color, taste and high nutritional value, they are becoming increasingly popular with consumers, leading to an increase in demand and consequently production. Due to the simplicity of cultivation, short production cycle, low investment and small space requirements, they are also suitable for cultivation in urban areas. The production of microgreens is usually organized as a sideline, which represents an additional source of income for the household. The aim of the paper is to describe the basic features of the production of microgreens, to specify the target markets for their placement, to project the necessary capital investments and to determine the financial indicators of their production. The paper presents the basic characteristics of the production and market for microgreens, taken from secondary sources and supplemented with the author’s findings from the practice of a Zagreb company engaged in the production and placement of microgreens. This company produces it in a vertical cultivation system on a total production area of 19.2 m2. The main sales channels are restaurants and health food stores. Based on the manufacturer’s internal data, a marginal contribution of €40,121 and a marginal contribution rate of 69.1% were determined.
