Sažetak

In this paper is desrihed preparation of fermented products from skim milk or from UF concentrated skim milk. We have also desrihed production of yoghurt obtained from milk with fruit-pasta layer on the top. Sweet flavoured dairy desserts from UF-concentrated skim milk with liquid rennet is also proposed. Dairy desserts supplemented, with fruit flavour and fructose instead of saccharose are "suggested for special purpose (dietetic and diabetic foods).
