Sažetak
Increasing population means increased global food demand. Therefore we are facing a great challenge in harmonizing the production of food with the need to reduce adverse environmental impacts of expanding agriculture. The problem could be solved by adopting a new field in biotechnology known as cellular agriculture. This agriculture can provide alternative manufacturing systems for many animal and plant-based products. The products mimicking meat and milk, are a major target of a growing number of start-up companies worldwide. These companies develop their technology relying on know-how from tissue engineering and animal cell bioprocessing. Here we present an overview of the cell culture-based technologies for in vitro meat and milk analogues production. We also discuss the quality of the products as well as the production requirements and sustainability.
