Impact of Different Harvest Dates on the Chemical Composition of the ‘Maraština’ Grape Variety in the Konavle Winegrowing Region

Abstract

The aim of this study was to determine the effect of different harvest dates on the chemical composition of the grape variety ‘Maraština’ in the Konavle winegrowing region. These findings contribute to a better understanding of the ripening dynamics and the development of the aromatic profile of one of the most economically important local varieties. The experiment was conducted at two locations (Gruda-B and Gruda-K) and included three harvest dates: early harvest (A), full technological maturity (B), and late harvest (C). The results showed that harvest date had a significant effect on sugar content, titratable acidity and pH. Early harvests showed the lowest sugar content and the highest levels of citric and malic acids, while later harvest dates resulted in increased sugar content and pH and a simultaneous decrease in titratable acidity. The harvest date also significantly affected the concentration of volatile organic compounds: aldehydes were highest in the early harvest, alcohols in the late harvest, while norisoprenoids and esters peaked at the regular harvest date. Selecting the appropriate harvest date can therefore influence the desired sensory properties of wines produced from the ‘Maraština’ variety.
