Abstract

Milk and dairy products are food staff discussed more than any other type of food. Discussion comprise in full from the importance of milk fat for the human health the to the influence of processing on the nutritive properties of milk. Attention should be turned to the role of milk in Weil-balanced system of nutrition and only after that the "protective aspect" of milk in human health, demanding more research, should be discussed. Paper contains data on world milk production and consumption. However the role of milk in World population nutrition is substantial, the economic stimulation of consumption of high - value products and constant increase of cheese consumption will surely keep the milk on the top.
