Abstract

The physicochemical traits (pH and water activity - aw) of mature Slavonian Kulen were measured on 100 samples from different regions of Slavonia (Posavina, n=35; Central and East Slavonia, n=32 and West Slavonia, n=33). High homogenity of Slavonian Kulen was found for pH (coeffi-cient of variability C.V.=3.5%) and aw (C.V.=4.2%) values with no significant difference between regions (p>0.05). With 95 % confidence, the interval estimation of the mean was established for pH (5.4, 5.49) and aw (0.780, 0.800) of mature Slavonian Kulen.
