Abstract

As one of the oldest cultivated plants, mustard has significant growth potential that can be used in food production, for medicinal purposes and in the chemical industry. Despite the favorable climatic and growing conditions, mustard is insufficiently represented in agricultural practice in Croatia, which represents an untapped potential for the development of agricultural production and market diversification. The aim of this thesis is to investigate the potential of mustard as an agricultural crop and the possibilities of its application in the mentioned areas. The study includes an overview of the drying and storage techniques for mustard, which are extremely important for maintaining its nutritional value and quality. Mustard, as an adaptable crop, can make an important contribution to the development of sustainable agriculture and the market for innovative products, opening up scope for wider application and economic enhancement.
