CONSUMER'S PERCEPTION OF CHICKEN MEAT QUALITY

Sažetak
The consumption of fresh meat in Croatia in 2005 amounted to 52 kg per a household member. Out of that amount, the most frequently consumed was chicken meat (19.61 kg). The survey into consumers' perception of the chicken meat quality was carried out on 500 examinees in five counties of the Slavonia region. Consumers mostly opt for buying and consuming chicken meat produced by domestic producers (96%), and pay attention to the product brand (63%). Obtained answers show that 11% of examinees consume chicken meat on a daily basis, 74% of them once a week, while 15% said that chicken meat was a part of their menu once a month. As there is a certain habit of consuming chicken meat in Croatian households, 7% of examinees consume it boiled, 15% prefer it deep-fried, 16% like it fried in breadcrumbs, and even 68% of them like it prepared in all three ways. The majority of examinees, around 42%, produce chicken meat in their households, 38% of them buy the meat in shopping centers, 12% at the butcher's and only 8% buy it on a city market. When buying chicken meat, examinees pay special attention to the quality (65%) and then to the price (35%). Referring to the quality and price, they usually opt for buying fresh meat (78%), i.e. the most valuable chicken parts (89%). The results of the survey show that 52% of examinees believe that sanitary control of meat is the most important indicator of the chicken meat quality, and 20% of them believe that is the nutritive quality. Furthermore, 14% of examinees think that the most important indicator of the chicken meat quality are the expiry date and keeping possibilities, as well as its nutritive values (14%). All consumers are aware of chicken meat advantages over other meat types. Chicken meat contains high percentage of protein, and is poor in fat and cholesterol. It is important to point out that chicken meat fat contains more unsaturated than saturated fatty acids. As many as 76% of examinees are aware of that fact. According to its nutritive composition, chicken meat is considered to be a dietary product.
