Biosynthesis and secretion of milk proteins

Abstract
Biosynthesis and milk protein secretion, though essential in dairy science have seldomly been discussed in research papers. Major milk protein components, caseins, a-lactoalbumin and ß-lactoglobulin as well as some enzymes, are synthesized and secreted by mammary epithelium. Others, like immunoglobulins, serum albumin and a number of minor proteins originating from blood, are found in milk in small quantities. Biosynthesis of proteins in the secretory cells of mammary epithelium is under genetic control and takes place in the rough endoplasmatic reticulum (RER). On their way to the lumen, passing through RER, Golgi apparatus and secretory vesicles, they undergo posttranslation modifications.
