Abstract

The paper describes various factors affecting the quality and taste of game meat. Game meat represents an alternative to traditional red meat. Consumers nowadays pay ever more attention to the quality, health and safety of products. The meat that is placed on the market is expected to be nutritionally valuable, fresh, juicy and savoury. Aroma is one of important factors that affect the sensory quality of meat and meat products. Since very little research on factors that affect the flavour of game meat is available, the aim of this scientific review was to discuss key factors affecting the flavour of game meat.
