Safety indicators of traditional dry sausages „kulen“ and „kulenova seka“ from Brod-Posavina County, Croatia with regard to Listeria monocytogenes

Sažetak
The assessment of the microbiological safety of fermented sausages in accordance with Regulation 2073/2005 includes criteria for Salmonella spp. and Listeria monocytogenes. In this context, the physicochemical parameters of the product determine the selection of criteria for L. monocytogenes regarding the suporting of its growth. The aim of this study was to determine the presence or absence of L. monocytogenes by molecular methods, water activity, pH, and the composition of the autochthonous microbiota in „kulen“ and „kulenova seka“ dry sausages (n=18) from Brod-Posavina County, Croatia. The average values of pH, water activity, and the numbers of lactic acid bacteria and enterococci did not differ signifcantly between the groups of samples (p>0.05). Listeria monocytogenes was not detected by molecular methods in any of the samples. Lactobacillus species predominated, specifcally Latilactobacillus sakei (44% of samples) and Latilactobacillus curvatus (28% of samples), while in individual samples Leuconostoc carnosum, Enterococcus malodoratus, Loigolactobacillus coryniformis, Lactiplantibacillus plantarum, and Pediococcus pentosaceus were also identifed. Traditional fermented sausages „kulen“ and „kulenova seka“ are microbiologically safe products with regard to L. monocytogenes, and the physicochemical properties, particularly water activity, would prevent its growth if present during shelf life. However, such an assessment cannot be made in general for the entire group of products, but only for individual production batches, given the non-uniformity of products between individual producers.
