Sažetak

Modem definitions of the concepts of Quality and Product reflect current situation in the field of food production, and dairy mark the direction of future trends in milk industry. Product quality is beyond the limits of measurable values, and it has become a sublime projection of consumers' wishes and expectations. The quality of milk products has its technological, organizational and marketing components which have to be respected to make a product successful on the market. In order to materialize such a concept it is necessary to have a technically very firm, and technologically extremely flexible production system. At the same time, companies must establish efficient mechanisms for total management of quality, as a relative value, which in its present, redefined form presents a new challenge for the company management.
