Sažetak

Milk and dairy products are food discussed more than any other type of food. Complete range of studies enclosed from importance of milk fat for human health to the influence of processing on milk nutritive properties. Importance of milk is great in well - balanced nutrition system, and the "protective aspect" of milk human health, that demands more research is of secondary importance. This paper deals with some nutritive and protective aspect of milk.
