Sažetak

The authors studied the technology, preservation and quality of dairy product from mountainous-hilly region of Bosnia and Herzegovina. They describe Travnik cheese, Livanjski cheese and kaymak, their technology, methods of preservation and dairy products, of good quality. The authors find the manufacture of these products under existing conditions to be justifiable.
