ESTIMATION OF CAROTENOID CONTENT FROM COLOUR ANALYSIS OF CORN GRAINS

The colour of egg yolk and poultry skin or flesh is a very important factor influencing the consumers’ quality perception. Carotenoid pigments which are associated with poultry growth metabolism and fertility are deposited in skin or egg yolk. Yellow corn is the only cereal with substantial carotenoid content. Also, yellow corn is the most important nutrient in poultry nutrition in Croatia and therefore an important source of pigments for poultry pigmentation. Carotenoids are located in the grain endosperm and they are responsible for the yellow colour of the grains. Chemical determination of carotenoids is often expensive and time-consuming and therefore inapplicable in practice. The aim of this research was to determine the relationship between the colour shade, according to the CIELab system, and the total carotenoid content in grains of 18 corn hybrids. Corn grain carotenoids were extracted with hexane and quantified using the extinction coefficient of β-carotene in hexane. The corn grain colour was measured with Chroma Meter Cr-410 (Minolta, Japan). The average carotenoid content was 33.16μg β-carotene/g (range from 22.13 to 47.47μg/g). Average values of colour parameters L*, a* and b* were 84.11 (78.81-87.29), 0.17 (-1.30-2.62) and 34.83 (29.87-40.07), respectively. Only yellowness (b*) correlated significantly (P<0.001) positive (r=0.79) with the carotenoid content in corn grains. According to the given data, the intensity of yellowness of corn grain determined as CIELab parameter b* could estimates its carotenoid content (carotenoid content (μg/g) =-22.33+1.577xb*, p<0.001, R2=0.63).
