Abstract
This paper explores consumer behaviour in gastronomy during and after the pandemic. The research observed
changes in mobility in areas connected with gastronomy and entertainment. We have developed a model
combining inflation, restrictions, and the number of COVID cases to evaluate the determinants of consumer
behaviour. The model relies on data from thirty-five European countries. The econometric model confirmed
that consumer behaviour was substantially affected by inflation and government restrictions. Consumers began
to value expenditure, and a behavioural change in eating habits was observed. An overwhelming majority of
the population is concerned about rising prices. The results allow us to assume that inflation has reduced the
pace of recovery in the gastronomy sector.
