Assessment lipase activity of the Pseudomonas fluorescens

Abstract

Lipase activity of Pseudomonas fluorescens designated 10, 14, 23 and M isolated from bulk milk was examined towards milk fat and tributyrine using agar diffusion method and titrating free fatty acids with 0,02 mol/l KOH. The results revealed that lipases from Pseudomonas fluorescens designated 10, 14 and M were more active to milk fat (log10 mm^2 2.21-2.56) than to tributyrine (log10 mm^2 2.14-2.46). Lipase isolated from Pseudomonas fluorescens 23 was more active to tributyrine (log10 mm^2 2.56) than to milk fat (log10 mm^2 2.46). The amounts of free fatty acids suggested that lipases isolated from Pseudomonas fluorescens 10, 14 and M were more active to milk fat (4.10-4.65 μmol/ml/min), than to tributyrine (3.00-3.52 μmol/ml/min). Lipase isolated from Pseudomonas fluorescens 23 was more active to tributyrine (5.32 μmol/ml/min) than to milk fat (5.10 μmol/ml/min).
