Observation of some physical and chemical characteristics of cheeses, covered with foil, during storage

Abstract
Plastic (PE) foils are used as packaging material for various food products. Final quality of a product packed in plastic foil greatly depends on the quality of gas, moisture, vapour and water penetrating the foil and changing the original properties of the product. In this study related are some physical and chemical parameters and the application of additional pectic membrane during storage of sliced cheese sample packed in a plastic foil. Applied pectic membrane has positive effects on cheese quality which has been verified through performed determinations.
