A contribution to the milk quality from the mountain-highlands regions

Abstract
The object of the present investigation was to establish milk quality and variations of milk quality in mountain areas of Serbia. The period of investigations involved five years from 1966 to 1970. Milk of eastern mountain part of Serbia was checked to determine percentages of milk fat, total solid content, solid non fat content and specific gravity. In conclusion, it could be said the following: 1) Total solid content of milk varied during the year, so that highest values were in the first and fourth quarters of the year, and minimum was observed in the third quarter. These variations of total solid of milk were due to dry period in the summer time; 2) Content of milk fat was during the whole research period high and variations were very small. Even when total solid content showed a decrease, the fat content was stable; 3) Solid non fat content followed tendency of total solid content, which means that smallest values were in summer time.
