The effect of temperature and water content in substrate on the growth of the mould Aspergillus ochraceus 318 and on the biosynthesis of ochratoxin A

Abstract

The production of ochratoxin A was examined in relation to the amount of biomass on corn grains under selected conditions. The largest amount of ochratoxin A was synthetized at 20 °C, with 38% water in substrate. A higher cultivation temperature (28 °C) proved favourable to mould growth, but decreased the production of ochratoxin A. A temperature of 37 °C stopped at the same time the production of ochratoxin A and of the biomass. The amount of 1.5 mg/g biomass produced a measurable amount of ochratoxin A.
