Abstract

plants. The Greeks and the Romans were aware of the benefits of olives and were therefore spreading their cultivation during the conquest of new territories along the Mediterranean Basin. Today olive oil has become synonymous with healthy living and proper nutrition. In addition to its use in diet, due to its high content of polyphenols, vitamins, fatty acid, sterols, phospholipids etc., that positively affect human health, olive oil is used in the treatment and prevention of diseases. It appears that the earliest known use of olive leaf for medicinal purposes dates back to ancient Egypt where olive leaf was considered a symbol of heavenly power. Oil extracted from olive leaves was therefore used as a part of the ritual of the mummification of their kings. It is believed that first olive trees in the area of Mesopotamia, Syria and Palestine, from where they have spread throughout the Mediterranean, were planted and cultivated 5 - 6 thousand years ago. Since the olive tea demand increases from day to day, this paper illustrates and describes the tools and equipment for the production of olive leaf tea.
