Abstract

Quality evaluation results and the classification of cattle carcasses on the slaughter-line of a large industrial slaughter house in the Republic of Croatia were analysed in the period from 1986 to 1990. Thus, 80,761 head of cattle, cosisting of 4,533 calves (5.64 %), 62,986 bullocks and heifers (77.99%) and 13,222 steers and cows (16.37%) were found to fall into the prescribed classification. While the larges number of calf carcaeses were classified into the second class (82,93 %), the halves of bullock and heifer carcasses as well as those of steers and cows were evaluated as the first class in 90,12%, i. e. 70.82% cases. As the prescribed procedure of beef quality evaluation on the slaughter - line was are to a great extent, subjective it should be supplemented by some objective quality indicators.
