Application of modern technology of controlled atmosphere in storing fruits

Abstract
Fruit cultures which are characteristic by their high content of antioxidant compounds and their high content of water require special conditions during storage, mainly because of maintaining nutritional and sensory quality of such fruits. So that the period of storing a fruit culture is as successful as it can be, the fruit culture should be prepared depending on the storage period right after harvest. For the last couple of years there have been developed special techniques of preparing and storing of fruit species, which include a change in the composition of the atmosphere where a fruit species is stored, with the main goal of prolonging a shelf life, but also preserving its external appearance and nutritional and sensory quality of the fruits. In this review paper there were described basic requirements of fruit species for storage conditions, the technology of pre-storage of fruits, adequate cooling systems and modern principles of storing fruits in conditions of modified and controlled atmosphere.
