YIELD, SHARE AND QUALITY OF MUSCLE TISSUE IN MEATY PIG CARCASSES OF DIFFERENT GENOTYPES

Abstract

The research was conducted on Large White and Swedish Landrace carcasses - the most numerous pig breeds in the Republic of Croatia as well as on two modern domestic genotypes of pigs - Line 1 and Line 3, starting genotypes in meaty hybrids creation. Pigs were fed from 25 to 105 kg of body weight in the same accommodation and feeding conditions. The right pig carcasses were dissected according to the method by Weniger et al. (1963). Line 1 had the biggest share of muscle tissue in the carcasses (58.17%) followed by Line 3(57.10%), Swedish Landrace (56.49%) and Large White (50.99%). A different share of muscle tissue was found with approximately the same meatiness of Sweidsh Landrace carcasses, Line 1 and line 3 (significant differences were not determined). Large White had the biggest share of muscle tissue in the neck (64,12%), Swedish Landrace in the shoulder (69.38%) and Line 1 and line 3 in ham (70.84% i.e.70.76%). In the total weight of muscle tissue in the carcasses of all the analyzed genotypes (Large White, Swedish Landrace, Line 1 and Line 3) the biggest share was found in ham muscle tissue (34,80%), 32,80% , 36.07% and 35.52% respectively) while the share of muscle tissue of other carcass parts differed by genotypes. Similar results were obtained for muscle tissue share of some parts (ham, back, shoulder, neck, abdomen-ribs) in carcass weight. The results of the research show that meatiness differs (carcass composition) depending on the aim of selection (genotype). Muscle tissue quality, according to the research indicators, was satisfactory.
