Abstract

The quality of fresh fruits and vegetables can be preserved by creating optimal atmospheric conditions around the product, whether it is in large storage areas or packaged products in retail. A decisive factor in preserving the quality of products in retail is the selection of adequate packaging for a specific product. Adequate packaging and packaging methods can not only preserve quality but can also increase the shelf life of the product. Such packaging systems include modified atmosphere packaging and active packaging. However, to successfully apply these techniques to preserve fresh produce, while using high-quality products (without any damage, bruising, etc.) it is also important to consider the external conditions to which the products are exposed. It is also necessary to emphasize careful handling, avoiding damage to the packaging and appropriate temperature maintenance, which will result in the good quality (appearance, texture, taste, smell, nutritional value) product throughout the entire marketing chain.
