THE EFFECT OF SEX ON SLAUGHTER TRAITS AND MEAT QUALITY OF ISTRIAN SHEEP LAMBS

Sažetak

Meat is one of the most important products of the Istrian sheep from its occurrence till nowadays. Although the meat is not currently the primary product of this breed, lamb is an indispensable product of modern sheep farming in Istria. Therefore, the aim of this paper was to evaluate the influence of sex on slaughter traits, carcass measurements, meat colour measured on the fresh section of m. longissimus dorsi (MLD) and m. rectus abdominis (MRA), chemical composition, and pH value of meat from lambs of Istrian sheep. A total of 98 Istrian sheep lambs (54 males and 44 females) were used in the study. Lambs continuously stayed in the barn and fed whole sheep milk (sequential suckling). In order to satisfy nutritional requirements, the lambs from the age of 3-4 weeks, along with milk, began to consume a good quality meadow and/or alfalfa hay (optional) and a certain amount of concentrates used in the feeding of their mothers. At the age of approximately 68 days lambs were individually weighed and slaughtered. Male lambs obtained a higher average daily gain (P<0.01) than female lambs. Consequently, the male lambs had higher average live weight at slaughter (P<0.05), heavier carcasses (P>0.05) and a slightly more developed internal organs than female lambs (P>0.05). A significant (P<0.05) effect of sex was determined only for the percentage of skin and feet, which was higher in male than in female lambs. Due to the less developed gastrointestinal tract Istrian female lambs had a higher average dressing percentage (P>0.05) from that in male lambs. The male lambs had higher L* value (P<0.05) of MLD, while the values of a* and b* colour indicators did not differ significantly between the sexes. A higher pH value of meat (P<0.05) in the female than in the male lambs was determined. Meat from Istrian male and female lambs was of very similar basic chemical composition.
