PROVING MILK DILUTION BY BERTTUZI'S REFRACTOMETER (LACTOMETER)

Sažetak

The methods used in our country so far to prove that milk has been diluted are not satisfactory because they are neither accurate enough nor easy to apply in field work. With this in mind the suitabillity of Bertuzzi's hand refraactometer was investigated in comparison with the calculation method most frequently applied here in routine work to prove that milk has been diluted by adding water. The results of 583 milk samples showed that both methods could be applied with almost equal accuracy to determine routinely not-fat dry matter, i. e. if milk has been diluted with water, This was confirmed by the results obtained and statistically processed showing that the correlation for the fat-free dry matler was 0.96 and for the diluted 0.94. Accuracy of both methods decreases with the change in milk density, i. e. in cases where milk has been diluted with a bigger amount of water. Applying Bertuzzi's hand refractometer the time needed to determine milk quality on the spot can be reduced to less than a third of the time needed in ussual calculation method. Work with Bertuzzi's hand refractometer enables quick selection of nonsatisfactory samples, makes the producer be have correctly when selling milk, ensures the supply of better quality milk to dairies, reduces significantly control costs when bying milk and by applying the method in field work improved milk quality for industrial processing can be expected.
