INFLUENCE OF CHICKEN GENOTYPE AND SEX ON YIELD AND OUALITY OF MEAT

Sažetak

Study of carcasses of chicken aged 49 days was carried out on two genotypes (Ross, Arbor acres) and on both male and female sex. On the total number of 80 samples slaughter weight, participation (in %) of essential parts in carcasses and tissue participation in breasts and leg with upper leg were studied. Physical and chemical analyses (pH, w.t.p., colour water, proteins, fat, ash) of breast and upper leg muscles were made. The results obtained are: The differences in slaughter weights show significant (P<0,05) and very significant (P<0,01) effect of genotype and sex. Participation of the back and wings was statistically significantly higher (P<0,05) in carcasses of female chickens and the participation of legs and upper legs very significantly higher (P<0,01) in carcasses of male chickens. When meatiness of the best carcass parts is considered differences between the genotype (P<0,05) and sex (P<0,01) were established in the yield of muscles in breasts and legs with upper legs. A significant effect of sex on differences in pH1 values of the muscles examined (P<0,05) was also established. Very significant differences (P<0,01) were established in the amount of water and proteins in breast muscles and water in the upper leg muscles with regard to the sex of chickens. The results of the study of these properties of the carcass and meat show a certain advantage of the Ross over the Arbor Acress chickens.
