Production and quality of milk and dairy products under conditions of war surrounding

Sažetak
During four-years war (1992-1995) Sarajevo was completely surrounded and subjected to permanent artillery fire on civilian facilities. Under these conditions it was not able to supply the city with food and energy sources. Inhabitants did not have enough food, especially high-value products, among them milk and dairy products. City dairy was significantly damaged and remained without necessary factors for production. In order to supply citizens with dairy products dairy workers found alternative solutions for shortage of raw materials, electric power, water, steam, wrapping material and other important factors. Thus, they succeeded to produce most of the prewar assortment; pasteurized milk, cream, yoghurt, kefir and occasionally ice-cream and cheese. Production was followed with internal control of quality as well as with control by the verificated inspection institution which found products quality satisfying. All products were made on the basis of milk powder reconstitution. As experiences of this kind up to now were not well known we decided to present them in this way.
